Crunchy High-Fiber Granola

Everyone loves Granola, yet most brands you see on your grocery store shelf are loaded with refined sugar, canola oils, and hidden calories that you don’t need.

This homemade granola is made with gluten-free carbohydrate sources that are high in fiber, easy to digest and will fuel your body anytime of the day. On top of that, we added some healthy fats from nuts and seeds, some collagen for additional benefits, as well as, natural sugars from honey and maple syrup.

In other terms, you can enjoy eating this granola guilt-free and even customize it to your own taste buds. All ingredients can be replaced and the options/varieties are endless. With that being said, let’s get to it.

Wet ingredients

  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract
  • 2 tbsp. manuka honey

Dry ingredients

  • 1 cup gluten-free old fashioned oats 
  • 1 cup gluten-free instant oats
  • 1 cup dry millet
  • ½ cup collagen powder
  • ¼ cup pumpkin seeds
  • ½ cup coconut flakes
  • ½  cup chopped pecans or walnuts
  • Dash of cinnamon
  • Dash of sea salt

 

Directions

  • Step 1: Combine the Coconut Oil and Manuka Honey in a bowl and microwave for 10-15 seconds or until completely melted.

  • Step 2: Add Oats, Millet, Collagen, Coconut Flakes, Cinnamon and Sea Salt to your liquid mix and begin stirring. Note: Your mixture should not be too liquidy, but rather a bit dry and sticky. This will allow the Granola to get that crunch your little heart desires.

  • Step 3: Next, add the pumpkin seeds and choice of nuts in a separate bowl and add in another ½ tablespoon of Maple Syrup. Stir until nuts and seeds are fully glazed with the syrup and somewhat sticky.

  • Step 4: Now it's time to add your mix onto a cooking sheet. Spray a bit of baking or coconut oil on the sheet and evenly distribute the granola mix onto the tray. DO NOT add the nuts and seeds yet. We will add them halfway through the baking to prevent the mix from getting a bit too crunchy….or shall we say burned.

  • Step 5: Bake Granola for a total of 20-30 minutes depending on your preference and strength of your oven. Halfway through the baking, add the nuts and seed mixture on the top of the Granola.

  • Step 6: Enjoy this crunchy Granola anytime of the day.
