Gut-Friendly Banana Bread

Enjoy this gut-friendly banana bread recipe any time of the day. It is the ideal snack and super easy to make. On top of that the recipe is gut-friendly and helps with maintaining a balanced diet.

Ingredients

  • 3 Bananas (1 for Topping)
  • 2 Whole Eggs (Room Temperature)Ā 
  • 1/3 Cup Maple Syrup (Don't use Honey)
  • 1/2 Cup 2% Greek YogurtĀ 
  • 1 3/4 Cup Whole Wheat FlourĀ 
  • Salt, Cinnamon, Baking Powder
  • 1/3 Cup Olive Oil or Butter
  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Chocolate ChipsĀ 

    Directions

    • Preparation:Ā Preheat the oven to 350 F and grease and line an 8x8-inch square pan with parchment paper.
      • Step 1: In a large mixing bowl, whisk together wet ingredients - mashed bananas, eggs, maple syrup and greek yogurt.
        • Step 2: In a separate bowl, whisk together dry ingredients - flour, salt, cinnamon, baking powder.Ā 
          • Step 3: Combine mixtures and mix until you reach a batter like consistency. Next, add Olive Oil or Butter to the mix. Lastly,Ā fold in the chopped pecans and chocolate chips and mix again until all mixtures and add-ins are well combined.Ā 
            • Step 4: Transfer the mixture to your prepared pan and bake for40-50Ā minutes or until a skewer poked into the center of the brownies comes out with no wet batter (a few moist crumbs are okay).
              • Step 5:Ā Leave the Banana BreadĀ in the pan for about 15 minutes before transferring to a wire rack to cool completely.
                • Step 6: Slice into 12 even pieces, serve and enjoy!Ā
