- 2 Ole Xtreme Wellness High-Fiber Tortillas
- 6 Large Shrimp peeled & deveined
- Coconut Oil Spray
- 1 Tablespoon Taco Seasoning
- 1 Avocado
- 2 Tomatoes
- 2 Peppers
- 1/2 onion
- 1 Fresh Lemon
Optional Shrimp Taco Sauce
- 1/2 cup Greek Yogurt
- 1 lime
- Dash of Cumin
- Salt & Pepper
- Chili Powder (if you like it spicy)
Step 1: In a blender or food processor, combine the Shrimp taco Sauce ingredients and mix until smooth. Set aside to marinate while you work on your tacos.
Step 2: In a large bowl, add the shrimp with the taco seasoning until evenly coated.
Step 3: Heat a large pan over medium-high heat and spray pan with coconut or pam spray and add in the shrimp.
Step 4: Cook the shrimp for 3-4 minutes or until fully cooked. Add cilantro and squeeze over the lemon juice, toss well and then remove from heat.
Step 5: While your shrimp is cooling off, it's now time to prepare your taco filling. Set aside a separate bowl and combine diced tomato, peppers, cilantro, red onions and lime juice. Lastly, dice your avocado in whatever size or shape you desire.
Step 6: Fill each High-Fiber Tortilla with your prepared ingredients and top it off with your homemade shrimp taco sauce and some extra cilantro.
