Healthy Low-Carb Shrimp Tacos

It is Taco Tuesday and while tacos are simply delicious, they are sometimes not the most healthiest option on the menu. However, we have come up with a recipe that is lower in calories, higher in fiber, more nutritious and still delicious and guilt-free. If you love tacos, give these shrimp tacos a try and always remember to be as creative as you want with the ingredients you add into the mix. Add your own flavor and spice. Alright, enough talking-let's get started.

Ingredients

  • 2 Ole Xtreme Wellness High-Fiber Tortillas 
  • 6 Large Shrimp peeled & deveined
  • Coconut Oil Spray
  • 1 Tablespoon Taco Seasoning 
  • 1 Avocado
  • 2 Tomatoes
  • 2 Peppers
  • 1/2 onion
  • 1 Fresh Lemon
  • Cilantro

Optional Shrimp Taco Sauce

  • 1/2 cup Greek Yogurt 
  • 1 lime
  • Dash of Cumin
  • Salt & Pepper
  • Chili Powder (if you like it spicy)

Directions

  • Step 1: In a blender or food processor, combine the Shrimp taco Sauce ingredients and mix until smooth. Set aside to marinate while you work on your tacos. 

  • Step 2: In a large bowl, add the shrimp with the taco seasoning until evenly coated. 

  • Step 3: Heat a large pan over medium-high heat and spray pan with coconut or pam spray and add in the shrimp.

  • Step 4: Cook the shrimp for 3-4 minutes or until fully cooked. Add cilantro and squeeze over the lemon juice, toss well and then remove from heat. 

  • Step 5: While your shrimp is cooling off, it's now time to prepare your taco filling. Set aside a separate bowl and combine diced tomato, peppers, cilantro, red onions and lime juice. Lastly, dice your avocado in whatever size or shape you desire. 

  • Step 6: Fill each High-Fiber Tortilla with your prepared ingredients and top it off with your homemade shrimp taco sauce and some extra cilantro.
