Mango Lemon Bar Recipe

Enjoy these delicious mango lemon bars any time of the day. Delicious, satisfying and nutritious. This recipe is ideal for everyone, that want to give the traditional lemon bar an extra tropical flair. The bars are super easy to make and taste amazing. Ingredients

Ingredients for shortbread crust:

  • ½ cup applesauce
  • ½ cup of sugar alternative (stevia, splenda, truvia or coconut sugar)
  • 2 cups of oat flour

Ingredients for lemon custard:

  • ⅓  cup diced mango
  • 1 tbsp fresh lime juice
  • 1 scoop Fiber G
  • 1 ½ cups sugar substitute (stevia, splenda, truvia or coconut sugar)
  • ¼ cup coconut flour
  • 4 large eggs
  • 1 cup fresh lemon juice
  • 1 tbsp pure vanilla

 

Directions

Directions for shortbread crust:

  • Preheat the oven to 350 degrees
  • Combine applesauce, sugar substitute and oat flour in a stand mixer. Press mixture into the bottom of a parchment linked 9x13 inch pan
  • Bake crust for 15-20 minutes, or until form and golden then remove to prepare filling

Directions for lemon custard:

  • Add diced mango and lime juice to a heavy duty blender or food processor and puree until completely smooth
  • In a medium sized bowl, whisk together Fiber G, sugar substitute and coconut flour to combine dry ingredients. Next, whisk in the eggs, lemon juice, ¼ cup of the mango puree and vanilla extract. Pour over the baked crust
  • Bake for another 25-30 minutes or until filling is firm and no longer liquidy. The bars will firm up more as they cool
